THAI MANGO SALAD

 THAI MANGO SALAD




Serves 4
1 medium size (600g) green mango, shredded
100g Thai Basil leaves
150g Mint Leaves
1 Torch ginger flower petals, shredded fine
1 medium carrot, peeled and shredded
1 medium purple onion, sliced into thin wedges

Dressing:
3 tbsp lime juice
2 tbsp fish sauce
2 tbsp brown sugar
2 tbsp Thai sweet chilli sauce

1. Wash herbs, spin dry and refrigerate. Shred mango, carrot and ginger flower.

2. Mix salad dressing ingredients in a bowl and stir with whisk to combine.

3. Put salad ingredients into a salad bowl. Toss salad with dressing just before serving.
