VEGETABLE FRITTERS

 KARIAGE 
(JAPANESE VEGETABLE FRITTERS)

1/2 a large Bombay onion,peeled
1/2 Red Capsicum
1/2 a medium Zucchini
30 g all purpose flour
30 g potato/tapioca flour
1 x 60g large egg, lightly beaten

Cooking oil for frying

1.  Slice onion and capsicum into 2mm thin wedges.
2.  Slice Zucchini into match stick sizes.
3.  Put all cut vegetables into a mixing bowl.
4. Measure the 2 types of flour into the vegetables. Stir to mix well.
5. Add in beaten egg and mix to combine.
6. I a frying pan add in oil to come up to 1/2 the height of the pan. Heat until hot.
7.  Drop in about 2tbsp vege mixture into the hot oil. Press down with spoon to flatten slightly.  Fry until brown. Turn over and fry the other side til lightly browned.
8.  Dish out and drain on wire rack.
9. Serve fritters dipped with shoyu mixed with mirin and bonito seasoning.
